“Do more of what you love,” they say. So today, that meant making some @grassrootscoop shredded pork and then eating a whole lot of said shredded pork 🤩. ⁣

If you watch my stories, you’ll see I started with like 10 taco lettuce wraps. My hubs and I quickly ate those and they were so good that we kept going by moving on to taco salads. ⁣

It’s quarantine Friday, y’all! Let’s virtual cheers together with this favorite drink of mine. 🥂⁣⁣

RECIPE:⁣⁣
In shaker mix 2oz tequila (I like Don Julio), 1oz @cointreau, 1oz fresh squeezed lime juice and some ice. Shake.⁣⁣
⁣⁣
In separate container mix 1tsp honey with 2TB water and warm it up and stir until the honey is diluted into the water. (You can do more honey and water if you like sweeter). ⁣⁣
⁣⁣
Mix diluted honey into shaker and shake again. Pour over ice (you can salt the rim if you want to be extra 💁🏼‍♀️). ⁣⁣
⁣⁣
Garnish with a lime. Enjoy! ⁣

“Is this a big problem or a little problem?” That’s a question my son’s occupational therapist taught us to ask him to help with emotional regulation and it’s a question I find myself asking daily during this season (to myself 🤪).⁣

With so much out of our control and many of us being in a heightened state of stress, it’s easy to let little things seem like big things. ⁣
⁣
When I start stressing over something that seems big, I ask myself “is this a big problem or a little problem?”. Usually, it’s little and in that moment, I am able to find some perspective, relief and gratitude. ⁣
⁣
I know this time is hard and the president’s address last night was grim but we’re going to get through this. As he said, there is light at the end of the tunnel. ⁣

So until we’re allowed back, I’ll just dream about the Florida shoreline at sunrise. ⁣

Keto Miracle Noodle Seafood Pasta, two ways!⁣⁣ This one is a can’t miss— seriously! It’s low carb, easy to make and absolutely delicious. ⁣⁣
⁣⁣
I used two types of @miraclenoodle, the “spaghetti” and the heart of palm based noodle. Both were delicious and gave the dish a different texture. I encourage you to experiment with both as well! ⁣⁣

Ingredients:⁣⁣
⁣
• 2 tbsp. butter⁣⁣
• 1 lb. shrimp, peeled and deveined⁣⁣
• 1 lb. scallops, patted dry⁣⁣
• Kosher salt⁣⁣
• Freshly ground black pepper⁣⁣
• 1 shallot, minced ⁣⁣
• 3 cloves garlic, minced⁣⁣
• 3/4 c. heavy cream⁣⁣
• 3/4 c. chicken bone broth ⁣⁣
• 1/2 c. freshly grated Parmesan, plus more for serving⁣⁣
• 1 c. chopped tomatoes ⁣⁣
• 1/4 c. freshly chopped parsley, plus more for garnish •Juice of 1/2 lemon⁣⁣
• 3/4 c. spinach ⁣⁣
⁣⁣
Directions:⁣⁣
1. Select your @miraclenoodle product of choice (I used heart of palm and spaghetti) and prepare according to package instructions. ⁣⁣
⁣
2. In a large skillet over medium heat, melt butter. Add shrimp and scallops ⁣⁣
and season with salt and pepper.⁣⁣
⁣
3. Cook 2 minutes per side, then transfer to a plate. ⁣⁣
⁣
4.To skillet add shallot and garlic cook until soft and fragrant, 3 minutes. Add heavy cream, broth, Parmesan, tomatoes, and parsley and season with salt. Simmer 3 minutes more, then return shrimp and scallops and toss until combined. Squeeze with lemon ⁣
⁣
5. Add @miraclenoodle and toss until fully coated. ⁣⁣
⁣
6. Garnish with parsley and serve with Parmesan.⁣

Easy, keto friendly kale Italian salad with crouto

Easy, keto friendly kale Italian salad with croutons (and kid approved, see last pic!).⁣
⁣
I started with curly kale tossed in olive oil, lemon and generous salt/pepper and let it sit while I made the croutons so that the kale would soften up. ⁣
⁣
𝐂𝐫𝐨𝐮𝐭𝐨𝐧𝐬: ⁣
• Melt 2TB butter in a bowl (or in this case, mug)⁣
• Once butter is melted add in:⁣
• 2/3 cup almond flour⁣
• 2 tsp baking powder ⁣
• 2 eggs⁣
• 3 tsp of your choice of Italian spices (I used a premade blend)⁣
• Pour into greased, microwave friendly pan⁣
• Microwave for 2.5 minutes (if middle is still mushy, keep going in 30 second increments until ⁣it solidifies)
• Let mix cool slightly⁣
• Once cooled, remove from pan and cut into crouton shape⁣
• Place in toaster oven in single layer, not touching, for 4 minutes, turning over halfway through⁣
• Let cool again ⁣
• Top salad with Parmesan cheese/croutons⁣
• Enjoy until your kid comes and takes it from you because #momlife ⁣
⁣
These measurements make enough for 2-3 salads. You can save croutons in air tight container in fridge and retoast for later use.⁣

While we are not POWs, we are undoubtedly going through a difficult time. We have the ability to come out of this STRONGER than ever, friends. We will prevail. ⁣

Guys- I have a question. What is this situation doing 𝘧𝘰𝘳 you rather than 𝘵𝘰 you? ⁣

It’s a question that @tonyrobbins asks and I’ve learned to ask it to myself in difficult or unpleasant situations. ⁣
⁣
So, this being an undoubtedly difficult time, I’ll answer first. ⁣
⁣
What this is doing for me is allowing me to refocus on what’s important. I’m reminded that if I have my family and we have our health, everything else is just details. I’m reminded that “stuff” very quickly loses its value and perceived meaning (unless it’s TP 😜) when greater things are at risk and so maybe I shouldn’t value them so much anyway. ⁣
⁣
It’s getting me to have immense gratitude for the smallest things like the light in my backyard at dusk, the sound of birds chirping outside my bedroom and all the cute little things my kids do that I would usually miss but now I see. ⁣
⁣
For a long time, I’ve worked to reduce the “noise” in my life so that I could get to this point. A quiet, slower paced life. It certainly feels like someone hit the fast forward button on that one 😂 but nevertheless, here I am. Here we all are. ⁣
⁣
While I look forward to everything getting back to normal, I hope to take the lessons from this season with me and, at the risk of sounding super cliche, to never take the little things for granted. ♥️ Photo by: @kallimaphotography 😍

Argentinian Empanada stuffing! I love having this

Argentinian Empanada stuffing! I love having this on hand as it can be used in a variety of ways (including to make empanadas, 🙈 duh!). ⁣
⁣
My Argentinian aunt shared this recipe with me when I was part of a cooking club with friends and it’s remained a staple in our family. We serve it over rice, salads, on pasta, etc. No one in my family measures...so I didn’t either.⁣
⁣
To make, I first I sautéed an onion and small peppers in some beef tallow (you can use whatever fat you like!), then I added in 2lbs of grass-fed ground beef from @grassrootscoop and sprinkled on salt, pepper, chili powder, cumin and garlic salt. I added a few bay leaves and cooked until all the liquid evaporated (or you can drain, it’s healthier). ⁣
⁣
In a separate pot I boiled two eggs, then I peeled them and chopped them up and added them to the beef mix. ⁣
⁣
If you want to have actual empanadas, you can buy pre-made empanada shells in the frozen section at many grocery stores, or you can brave making your own (I’m not there yet). ⁣
⁣
To keep keto, I eat it over greens. My kids love it over white rice. ⁣
⁣
I’m going to use this quarantine-ish time to try some new recipes (with whatever ingredients I already have at home!). Cheers, friends!⁣

Pro Tip: Having your morning @bulletproof coffee on a boat makes it taste better. It’s the most beautiful day ever in Sarasota today and we’re totally soaking it in with some fishing and dolphin sightings. This may be my favorite way to avoid crowds 😜.
