Keto Miracle Noodle Seafood Pasta, two ways!⁣⁣ This one is a can’t miss— seriously! It’s low carb, easy to make and absolutely delicious. ⁣⁣ ⁣⁣ I used two types of @miraclenoodle, the “spaghetti” and the heart of palm based noodle. Both were delicious and gave the dish a different texture. I encourage you to experiment with both as well! ⁣⁣ ⁣⁣ A reminder that you can get 10% off your @miraclenoodle purchase using code wellnessjovi on their website! ⁣⁣ ⁣⁣ Ingredients:⁣⁣ ⁣ • 2 tbsp. butter⁣⁣ • 1 lb. shrimp, peeled and deveined⁣⁣ • 1 lb. scallops, patted dry⁣⁣ • Kosher salt⁣⁣ • Freshly ground black pepper⁣⁣ • 1 shallot, minced ⁣⁣ • 3 cloves garlic, minced⁣⁣ • 3/4 c. heavy cream⁣⁣ • 3/4 c. chicken bone broth ⁣⁣ • 1/2 c. freshly grated Parmesan, plus more for serving⁣⁣ • 1 c. chopped tomatoes ⁣⁣ • 1/4 c. freshly chopped parsley, plus more for garnish •Juice of 1/2 lemon⁣⁣ • 3/4 c. spinach ⁣⁣ ⁣⁣ Directions:⁣⁣ 1. Select your @miraclenoodle product of choice (I used heart of palm and spaghetti) and prepare according to package instructions. ⁣⁣ ⁣ 2. In a large skillet over medium heat, melt butter. Add shrimp and scallops ⁣⁣ and season with salt and pepper.⁣⁣ ⁣ 3. Cook 2 minutes per side, then transfer to a plate. ⁣⁣ ⁣ 4.To skillet add shallot and garlic cook until soft and fragrant, 3 minutes. Add heavy cream, broth, Parmesan, tomatoes, and parsley and season with salt. Simmer 3 minutes more, then return shrimp and scallops and toss until combined. Squeeze with lemon ⁣ ⁣ 5. Add @miraclenoodle and toss until fully coated. ⁣⁣ ⁣ 6. Garnish with parsley and serve with Parmesan.⁣ ⁣

⁣Hearty chicken noodle soup, just like mama made it, but different 😇. Keto fried “rice” 🍚! I found the perfect low carb “rice,” and I am so excited! ⁣ ⁣ Ever since starting keto, I’ve been on the hunt for something to replace one of my favorite comfort foods- rice. I tried riced cauliflower but it didn’t feel like the consistency was right. ⁣ ⁣ I was beyond excited to try the @miraclenoodle option and it did not disappoint! I’ve been a long time fan of their noodles but discovered the rice recently. ⁣ ⁣ I’ve now made a variation of fried rice twice. You can follow my process along in my stories and I will store all of my Miracle Noodle creations in my story highlights (look for “Miracle Noodle”). ⁣ For this meal I used; @miraclenoodle rice, broccoli, carrots, cauliflower, onions, chives, ginger, fish sauce, coconut aminos, eggs, avocado oil, butter and sauerkraut.⁣ ⁣ I sautéed the veggies while cooking the rice per package instructions. I then mixed in the cooked rice, and scrambled an egg in the same pan. I sprinkled some fresh grated ginger, coconut aminos and fish sauce over the whole thing. Once served, I topped it with some cooked shrimp, chives and sauerkraut and it was so good! ⁣ ⁣ During dinner, my husband looked up at me and said “babe, this is good.” That’s always the best compliment! Dinner last night was a keto friendly, easy fettuccini Alfredo! ⁣ ⁣ I’m back home from my trip and back on the keto wagon. This was a perfect meal to ease me back into it after a week of lots of carbs, wine and ‘round the clock eating. ⁣ ⁣ I used @miraclenoodle’s fettuccini noodles, one package of organic baby bella mushrooms, one bunch of organic asparagus and some jarred @newmansown Alfredo sauce. I first sautéed the veggies in some @kerrygold butter then cooked the noodles according to package instructions, added everything to the same pan and mixed in the sauce, salt and pepper. Tonight’s dinner was roughly 3g of net carbs! I threw this together on a whim in like 20 minutes. It was a pretty good keto “pasta” dish and with some more tweaking, I think it’ll taste and feel closer to the real thing…⁣ ⁣ I started with Miracle Noodles (which somehow have negative net carbs?) and cooked them according to package instructions. Then, I mixed in some ground beef (seasoned simply, with chili powder, salt, pepper and bay leaves), added organic tomato sauce, mozzarella and parmesan cheese, salt, pepper and oregano and dug in. It was good and my husband said it was great (but it’s been a long time since he’s had the real thing!). ⁣ ⁣ Have you tried Miracle Noodles?
